Easy Italian Chicken Bake
This is one of my go-to recipes when I’m tired at the end of the day and just really not feeling motivated to put forth much effort in the kitchen. Prep time is minimal and the great thing is that you can just stick it in the oven to bake while you do dishes and laundry; or even better, just plop down on the couch with a glass of wine ;).
I also like this recipe because it includes some good veggies and protein that you can cook together without too much effort on preparation. For some good complex carbs, just stick some rice or pasta (I like gluten-free brown rice spirals served with a little tomato sauce) in a pot and serve alongside the chicken bake.
Here’s what you’ll need:
2 whole chicken breasts
1 15 oz can diced, fire-roasted tomatoes (or more if you like)
Frozen, chopped spinach (or fresh baby spinach if you have it)
3/4- 1 cup shredded mozzarella cheese (can use reduced fat for fewer calories)
1/4 cup parmesan cheese, grated
1 garlic clove, diced
Seasonings: Oregano, Basil, Parsley
Sea salt and black pepper
Non-stick cooking spray
What to Do:
Preheat oven to 375. Spray a large casserole dish with non-stick cooking spray and add chicken breasts (separated into halves). Add as much spinach as you like, I usually just scatter about half a bag of frozen spinach around the chicken. Next, add the canned tomatoes and sprinkle the diced garlic over the dish. Alternatively, you could dust with garlic powder if you don’t feel like chopping the garlic.
Spread a thin layer of parmesan and mozzarella cheese over the top. Lastly, in the sense of being quick and easy, I didn’t even measure the spices. I just sprinkled a small amount of oregano (about 1/4 teaspoon) and basil (about 1/2 teaspoon) on top and about ¾ tablespoon of dried parsley. Dust with salt and pepper to taste.
I started at 350 for about 45 minutes and actually had to turn the oven to broil at the end to get the cheese to brown, so I’d recommend cooking at 375 for 30-35 minutes or until cheese is nice and browned. Note: if you used a very thin layer of cheese, it may brown quicker than the chicken will cook, so you may want to lower the bake temperature to 350 and cook up to 45 minutes.
