Healthier Blackberry Mojito
I looove to drink. Haha… just kidding. Sort of. 😉 But can you think of anything more relaxing than a warm summer evening spent outside on the patio with friends and a refreshing summer cocktail? Me neither! I’m definitely hanging on to every last bit of summer left and this light, citrusy, blackberry mojito is perfect for enjoying these muggy, late summer evenings.
Now I know you’re thinking this blog is supposed to focus on “healthy” foods and fitness, but I’m a firm believer in “everything in moderation.” You can absolutely be healthy, fit, and fabulous… and still have a drink (or chocolate, or a cupcake! :D) every now and then. Of course, there are always ways to make the “unhealthy” stuff healthier, so that is exactly what this recipe does, without sacrificing any deliciousness.
What you’ll need:
- 6-8 blackberries
- 1 large lime (the soft ones tend to work better)
- plain liquid stevia
- white rum (I used Bacardi)
- lime press or juicer (I use OXO Citrus Juicer)
- Mint leaves
- Club soda
What to Do:
Press one lime (yields approximately 1-2 oz of juice) and crush the black berries (I usually just press them on the citrus juicer). In a separate glass, take 7-8 large mint leaves and bruise/crush them. Add lime/blackberry juice mix, 1/4 cup white rum, 2-3 full droppers of Kal liquid stevia (SweetLeaf is also great but much sweeter, so use about half as much). Add ice to the brim and cover with club soda. Give a light stir and top with a fresh mint leaf and an uncrushed blackberry.
This mojito has approximately 145 calories.
